Well
of course, if you don’t open the bottle you can’t drink it, right, yes that’s
accurate but that’s not what they are referring to. “Open Up” for wine is kind of like letting
your steak rest after you take it off the BBQ pit, covering and resting a steak
helps it soak up the juices so it will taste better.
Open
a bottle of Cabernet and pour a little in a glass then taste it, notice the
flavors tart, smooth, smoky, etc. Set
the bottle aside and busy yourself with something else, go back in 10 or 15
minutes and pour another small amount in a glass, when tasting it take notice
in the difference from the previous tasting, it has likely improved.
